Philippines, an archipelago country compose of different region that has its own unique tradition and culture. Each of the region has its own unique taste and cuisine that are to proud of. The factor beyond those differences are mainly affected by their natural source of food supply, others might be influenced by religious belief and some are influenced by culture and tradition .
Ilocos Province: Ilocos region is situated in Northwest area of Luzon, people out there is locally known as Ilocano. The area is nearby the sea and majority of land are agricultural area that makes their vegetable and fishes as one of major staple in their daily food. Ilocano are well known for preparing diningding- a popular vegetable food that uses local vegetable in their area, ampalaya, ocra, eggplant and other vegetable sprout. They use a special flavoring known as bagoong (shrimp paste) to enhance flavor with their recipe.
NCR Region and Nearby Province: Metro Manila or Nationa Capital Region is the main business area in Philippines, they are known for their recipe such as pakbet, bulalong tagalog, and other recipe. Bulacan region is a nearby province in Metro Manila. Bulacan is known for its Lechon Bocaue, Burong isda (Fermented fish with rice), famous ensaymada of Malolos. Bulacan is also rich with agricultural product and marine product. Their food includes fresh and salt water fish, vegetable and some exotic food such as rice field frog (Like it so much, taste like chicken).
Bicol Region : Bicol region was situated in Southern part of Luzon, Bicolanos are famous with hot and spicy food it could be seafoods, vegetable or pork. It is also usual with their food top include coconut cream as base for sauce. Some of their famous recipe are Laing, Kinunot, Bicol express. They are also known for their Pili nuts.
Calabarzon : Calabarzon region is popular with some recipe. Lomi, Goto, Buko pie and Bulalo of Batangas and Tagaytay.
Visayas Area : Visayas are known for their guinamos, Sinugba, kinilaw. Bacolod, an area in Visayas region is popular with their Inasal, La paz batchoy.
Mindanao : Some of our Mindanaoans brother are abstaining from eating pork because of Islamic belief, they usually used curry, turmic, ginger, chilli. Some are usual on eating fresh seafood , grilled or fried.
As a whole, rice is the main staple for Filipino food, for some it might be corn or cassava, depending on supply or economic situation. There might be some differences for Filipinos when it comes with culinary style and cooking recipes but Filipino all over the country is always open to taste other regional recipe.
